Oven Baked Candied Sweet Potatoes

My mom made something like this when I was a kid.

Ingredients
  1. 3 tbsp white sugar
  2. 1 tsp cinnamon
  3. 6 tbsp butter
  4. 2 large sweet potatoes
Instructions
  1. Mix the sugar and cinnamon together in a small dish to make some cinnamon sugar.
  2. Wash sweet potatoes and dry them off.
  3. Cut the sweet potatoes into cubes/chunks (they don't have to be perfect shapes, just cut down to about 1 inch in size). I typically cut the sweet potato in half length wise so that you have two long halves. Cut this into 4 long strips and then chop those strips up.
  4. Place and even layer of potatoes on a cookie sheet or in a large baking dish. I use a stoneware cookie sheet that has been well seasoned over years of usage.
  5. Melt 3 tbsp butter in microwave and brush over the potatoes.
  6. Sprinkle about half of the cinnamon sugar over potatoes.
  7. Bake at 425º for 15 minutes
  8. After 15 minutes remove potatoes from oven and flip them over as best as you can and repeat steps 5 - 7.
