For the Dough
  1. 1/2 Cup Warm water + 2 yeast packets
  2. 1 Cup Plain Mashed Potatoes (no milk, no butter, nothing.)
  3. 1 1/2 tsp Salt
  4. 1 stick of butter, melted
  5. 2 eggs
  6. 1/2 Cup Sugar
  7. 1 Cup Milk
  8. 4 Cups All Purpose Flour (slowly add last)
For Topping
  1. 1 Stick of Butter, Melted
  2. 1 Cup Brown Sugar
  3. 1/2 tsp Cinnamon or more 😉
Instructions
  1. Combine warm water and yeast packets and let sit for about 5 min.
  2. After 5 min add it to a stand mixer along with mashed potatoes, salt, melted butter, eggs, sugar, and milk.
  3. As this all mixes slowly add the flour until combined well. The dough will be sticky. We're not trying to make bread dough!
  4. When you're happy with the dough, leave it in the mixing bowl or move it to a bowl sprayed with cooking spray and let it sit for 1 - 1 1/2 hours until the dough has doubled. I like to spray some cooking spay on top of the dough and cover the bowl with wax paper so that when it rises it will not stick.
  5. Spray 2 jelly roll pans with cooking spray. Or whatever size pan you want. I use one single 11x15 stoneware bar pan.
  6. Plop the dough on the pan(s). Spray your hands and the top of the dough with pan spray to keep it from sticking, and start stretching/patting/pulling the dough to fit each pan. Try poking your fingers into it as if you're playing the piano. This helps make little indentations for pools of butter and sugar to form.
  7. Once the dough is shaped let rise in the pan for another 30 minutes.
  8. Bake in preheated over at 375º for 15-20 minutes or until golden brown.

Grandma’s Chocolate Pie

April 9, 2016 by Jeff Portaro 1 Comment

When my parents settled the estate of my grandparents, the late Royce & Ophelia Stutts, my mom asked me if there was anything I wanted. All I could think of at the time was one of my grandmother’s cast iron frying pans, and a double boiler. I never knew what a double boiler was used for up to a certain point in my life except for cooking one thing…Chocolate Pies. And not just any chocolate pies. These are the “you better make one for yourself because if you take it to a public function you’ll never bring home leftovers” kinda pies.

Shepherd’s Pie with Potato Crust

November 5, 2015 by Jeff Portaro Leave a Comment

This is the only recipe you will ever need for a Shepherd’s Pie. No others will compare to the glory your tastebuds will endure. This is the only version I have ever attempted and will most likely be the only version I ever make.

Spicy and Sweet BBQ Sauce

March 13, 2015 by Jeff Portaro Leave a Comment

I use this sauce on just about any cut of meat that gets grilled or baked. This sauce works best on pork ribs, and chicken. When baking these easy Fall-off-the-Bone Ribs you may want to try pairing this sauce with a simple spiced rib rub.

Easy fall-off-the-bone Oven Baked Pork Spare Ribs

March 13, 2015 by Jeff Portaro Leave a Comment

Ribs cooked in the oven? Who knew!? I thought grilling them was the only appropriate way. This recipe is pretty easy to follow and can easily be adapted to suit your tastes. Change up the rub, use a different sauce, maybe even throw them on the grill for the last 30 minutes. Do whatever you want, just make sure you save some for leftovers… or not.

Apple Cinnamon Bread

March 3, 2015 by Jeff Portaro Leave a Comment

If my picky eater six year old says this is good, then it must be good. This Apple Cinnamon bread has a great flavor and gives you an excuse to eat the bread equivalent of a cinnamon roll any time of the day. This bread is super simple to make and will disappear off a plate faster than it took to make it.

Mom’s Goulash

January 7, 2015 by Jeff Portaro 2 Comments

Mom’s Goulash Recipe…need I say more? Well, sure. Im not sure where my mom got this recipe from or if I even knew what Goulash was as a kid, but according to wikipedia; Goulash is “is a soup or stew of meat and vegetables, seasoned with paprika and other spices. Originating from the medieval Kingdom of Hungary.”

One thing I know for sure is that Hungary is the last thing you’ll be after a bowl full of this with a side of corn bread.

Ingredients
  1. 1 lbs. Ground Beef
  2. 1 medium onion
  3. 1 medium bell pepper
  4. 1 can of Van Camp's Pork & Beans, 15 Oz
  5. 1/2 cup of Kraft Barbecue Sauce (hot). You can use just about any BBQ sauce, but mom always used the Kraft Hot which has been discontinued. You could try Kraft's Slow-Simmered Thick & Spicy Barbecue Sauce
  6. Salt & Pepper to taste (not really necessary)
Instructions
  1. Chop pepper and onion and combine with ground beef in large skillet.
  2. Cook on medium high heat until the ground beef is browned. Skim of excess fat.
  3. Add Pork 'n Beans, and barbecue sauce. Simmer at low heat for 20-30 minutes.
  4. If desired, you can make a pan of Cornbread while the last step is cooking.

Baked Pork Chops in a Creamy Mushroom Sauce

December 30, 2014 by Jeff Portaro Leave a Comment

I first made these in 2008 and for some reason or another I only make them in the winter time. Maybe it has something to do with the traditional New Year’s meal of pork chops, black eyed peas, and collard greens we ate as kids growing up in the south. Either way, these pork chops are ridiculously tender and moist and should be made more than once a year.

Ingredients
  1. 6 Pork Chops
  2. 1 tsp Garlic Powder
  3. 1 tsp Kosher Salt
  4. 2 Eggs, beaten
  5. 1/4 cup all purpose flour
  6. 2 cups panko bread crumbs
  7. 4 Tbsp Olive Oil
  8. 1 (10.75oz) can of Condensed Cream of Mushroom Soup
  9. 1/2 cup Milk
  10. 1/3 cup White Wine
  11. 1 (8oz) package of fresh mushrooms, sliced
Instructions
  1. Preheat oven to 350º
  2. Rinse and pat dry the pork chops. Season with garlic powder and seasoning salt to taste.
  3. Place beaten eggs in a small bowl. Dredge the pork chops in the flour, dip in the eggs, and coat with bread crumbs.
  4. Heat the olive oil in a medium or large skillet (depending on the size of our pork chops) over medium-high heat.
  5. Fry the pork chops for 5 minutes per side or until the breading appears golden brown. Transfer to a 9x13 baking dish and cover with foil.
  6. Bake in oven at 350º for one hour. While the pork chops are baking, combine the cream of mushroom soup, milk, white wine, and fresh cut mushrooms in a large bowl.
  7. After the pork chops have baked for 1 hour; cover them with the soup mixture, replace the foil and bake for another 30 minutes.
  8. Serve with a side and enjoy.
