Broccoli and Cauliflower Salad

As a kid I never realized that this had to have been my mom’s secret way of getting us to eat our vegetables. This dish was always a requested item at the many family reunions and covered dish dinners we attended growing up. I’m not sure if it was the bacon or the dressing that got me hooked, but I still enjoy this recipe.

Broccoli and Cauliflower Salad in a blue bowl

Ingredients:

1 head of Broccoli
1 head of Cauliflower
1/2 Red Onion chopped
3-4 Strips of Bacon cooked and chopped
1/2 cup Dukes Mayonnaise
1/3 cup oil
1/3 cup Apple Cider Vinegar
1/4 cup Sugar
1/2 tsp Salt
1/8 tsp Ground Pepper

 

Instructions:

1. Cut broccoli and cauliflower into 1-2 inch florets and arrange in one even layer in a 9×13 oblong baking dish.
2. Sprinkle the chopped onion and bacon over the broccoli and cauliflower.
3. Whisk together mayonnaise, oil, vinegar, sugar, salt and pepper to create the dressing for the salad.
4. Pour dressing over broccoli-cauliflower mixture, cover and refrigerate over night to allow for the dressing to marinate into the veggies. You could eat it fresh, but it tastes better the longer its sits and soaks up the sweet dressing flavor.
5. Enjoy.
