When my parents settled the estate of my grandparents, the late Royce & Ophelia Stutts, my mom asked me if there was anything I wanted. All I could think of at the time was one of my grandmother’s cast iron frying pans, and a double boiler. I never knew what a double boiler was used for up to a certain point in my life except for cooking one thing…Chocolate Pies. And not just any chocolate pies. These are the “you better make one for yourself because if you take it to a public function you’ll never bring home leftovers” kinda pies.
Grandma's Chocolate Pies

There is no other chocolate pie recipe.

Ingredients
- 2 Pie Shells (Not the deep dish kind)
For the Chocolate Filling
- 2 C. Sugar
- 3 Tbsp. Cocoa Powder
- 3/4 C. All Purpose Flour
- 4 Egg yolks (save the whites for the meringue)
- 4 C. Milk
For the Meringue
- 4 Egg White
- 1/2 C. Water
- 1/2 C. Sugar
Bake the Pie shells
- Preheat oven to 400ºF
- Defrost the pie shells if frozen (about 15 min.)
- Thoroughly prick bottom and sides of crust with a fork
- Place on a baking sheet and bake on middle rack of oven for 10-12 minutes.
- Let cool completely before adding chocolate filling.
- Reduce oven to 350º (for the meringue after the chocolate part is done)
For Chocolate Filling
- In a large bowl mix together all the dry ingredients ( 2 C. Sugar, 3 Tbsp. Cocoa Powder, 3/4 C. All Purpose Flour)
- In top pot of double boiler mix together the wet ingredient (4 Egg yolks and 4 C. Milk)
- Slowly stir in dry ingredients until mixed well. Try not to get any lumps or chunks (this is important).
- Stir ingredients with a spoon for 30 minutes. Yes, constant stirring for 30 minutes; keeping in mind that you don't want any lumpy spots. At the end of this time the filling will be thick enough that the stirring spoon will stand up in the pot without falling over
- Pour chocolate mixture in to the two pies shells
For Meringue
- Beat 4 egg whites and 1/2 C. water until stiff. About 5 minutes
- Add in the 1/2 C. sugar and beat until stiff. Another 5 Minutes.
- Spread half of meringue on each pie and bake at 350º for 15-20 until meringue is golden brown.
- Let cool and serve.
