I’ve been making a variation of this since my days in college. Its super easy to make and is a favorite in our household.

Pan Roasted Ribeye with Stir Fry Bell Peppers and Onions over Rice

Ingredients
- 2 12oz Ribeye Steaks
- 2-3 Bell Peppers (any color will do)
- 2 Sweet Yellow Onions
- 1 Tbsp Worcestershire Sauce
- 2 Tbsp Vegetable Oil
- 2 Tbsp Butter
- 2 Cups Rice
- 4 1/2 Cups Water
- 1 Tbsp Coffee Grounds
Instructions
- Preheat oven to 400ºF.
- Prepare rice by combining the rice and water in a pot. Cover and bring to a boil. Reduce to medium heat and cook for 30 minutes.
- Heat the Worcestershire Sauce and 1 Tbsp Vegetable Oil in a large skillet or frying pan at medium-high heat (6 on my stove).
- Cut up the peppers and onions an place in the pan.
- Heat the butter and remaining 1 Tbsp Vegetable Oil in an all-metal skillet or frying pan at medium-high heat (this is important since this pan will end up in the oven. Please don't use one with a plastic handle, you'll hate yourself later).
- Rub the ribeyes with the coffee grounds and brown both sides in the all-metal frying pan for 1 minute per side.
- After browning both sides, place the pan in the oven for 15 minutes.
- Remove steaks from oven, slice into strips and serve with veggies over rice.
Notes
- An alternate method of cooking the steak is to add to the stir fry after the veggies start to soften. This is the method I typically use when cooking only one ribeye since I can fit everything into one pan.
